小鰯のフリット

広島の梅雨と言えば小鰯(小さな片口いわし)の解禁！
身を開いて冷水で繰り返し洗った小鰯に紫蘇の葉と叩き梅を挟みました
色々試したけどこの組み合わせを超える味にまだ出会えないですよね

骨までサクサク。紫蘇の葉と梅の香りがふわっと口の中で広がるフリットをキリッと冷えた白ワインでどうぞ♪

Small sardines that have been opened and washed repeatedly in cold water are sandwiched between shiso leaves and pounded plums

I've tried a lot of different combinations, but I've yet to find one that beats this one
